MY BELGIAN ORGANIC PANCAKE & WAFFLE MIX IS NOW AN OFFICIAL MASTER MIX YOU CAN USE FOR ALL OF MY OTHER FAVORITE FLAVORS-START TRYING THEM FOLLOWING THE RECIPE'S BELOW!


         
                                                   CORNBREAD MIX
Pancakes or Waffles
*Using My Organic Belgian Pancake & Waffle Mix

BOWL #1:
In a large Mixing Bowl pour in the whole box of  BELGIAN MIX
REMOVE: One level CUP of  BELGIAN MIX and save in a separate plastic container or mason jar with lid.  
ADD:  One level CUP of GROUND CORNMEAL

BOWL #2:  Whisk together 2 Eggs & ¼ Cup Butter plus 2 ½ Cups Buttermilk or Low Fat Milk in a separate Bowl. 

COMBINE WITH DRY MIX:  Add Wet Ingredients to Dry Ingredients in Bowl #1 & Whisk/Blend together until just smooth.  (about 3 minutes) Let rest for 15 minutes while your waffle iron or pancake griddle is heating.

NOTE: The 1 Cup of Dry Mix can be saved in a covered container or Mason Jar & when you have 3 Cups saved you have enough to make another Batch of
Waffle Lady BELGIAN MIX!

May Birthday Cookies


This a very Big Birthday Month in our family so I thought it's about time to get this awesome Toll House Cookie recipe adapted for you from my Organic Belgian Waffle Mix.  
You will save a considerable amount of time by using my Belgian mix & cutting out the tedious task of measuring the dry ingredients.  Plus the mix has just enough flour to make the cookie nice & soft.  When my children were young I always used the Nestle's Toll House Cookie recipe on the back of the Chocolate Chip package but added 1/4 cup extra flour so the cookie wouldn't come out so flat.

Waffle Lady Toll House Cookies
In a large mixing bowl beat together:
2 Eggs
1 Cup soft Butter - OR if VEGAN use Crisco OR ½ each.
¾ Cup firmly packed Brown Sugar

Add 1 box of Waffle Lady Organic Belgian Mix

Blend with an electric mixer or a heavy whisk until smooth

Stir in  2 Cups Dark Chocolate Chips  &
 Optional***2 Cups Chopped Walnuts

Line a baking sheet with Parchment Paper & scoop by the rounded
teaspoon or tablespoon leaving enough room for each cookie to double in size.

Bake for 12-15 min @ 350 degrees for the best cookies ever!

Place on a Cookie Rack to cool and

#Gavin's Way

 Gavin flew up to the farm yesterday to spend Valentine's Day with his Granny & Papa.  He loves to make  Granny's Waffles all by himself  #Gavin's Way.  He came up with this idea when his mom (Amy) was negotiating how many chocolate chips he could have for breakfast with each waffle.  Here are Gavin's directions for perfect Chocolate Chip Waffles . . .
One Chocolate Chip in EVERY pocket of his Belgian Waffle right after the waffle comes out piping hot from the waffle iron.  He's been doing this since he was 8.  He won't let his mom or me help & he won't play a basketball game without having his "lucky" waffles on game day!  His last championship game he made 25points (5 three point shots) after eating waffles for breakfast.  I'm not kidding, this is a true story . . .it doesn't get any better than this-:)
